Note: Makes about 12 bars
1 cup pitted dates
2 cups walnuts or almonds
2 cups unsweetened coconut
3/4 cup reduced sugar dried cranberries
3 tbsp water
In a food processor, add walnuts, dates, coconut and cranberries.
Process until the mixture is well combined and has a crumbly texture.
Gradually add in the water a tablespoon at a time and keep processing until the mixture is sticky and holds together.
Line a 9×9 square baking dish with plastic wrap then press the mixture into the pan. Press down firmly to ensure the mixture sticks well together.
Sprinkle a little coconut over the top.
Chill in the refrigerator for a couple of hours before cutting into small bars
