Homemade Fruit & Nut Bars


Homemade Fruit & Nut Bars Ingredients:

Note: Makes about 12 bars

  • 1 cup pitted dates

  • 2 cups walnuts or almonds

  • 2 cups unsweetened coconut

  • 3/4 cup reduced sugar dried cranberries

  • 3 tbsp water

Homemade Fruit & Nut Bars Directions:

  1. In a food processor, add walnuts, dates, coconut and cranberries.

  2. Process until the mixture is well combined and has a crumbly texture.

  3. Gradually add in the water a tablespoon at a time and keep processing until the mixture is sticky and holds together.

  4. Line a 9×9 square baking dish with plastic wrap then press the mixture into the pan. Press down firmly to ensure the mixture sticks well together.

  5. Sprinkle a little coconut over the top.

  6. Chill in the refrigerator for a couple of hours before cutting into small bars
